Pasta Party

Italian food is perfect for a small family dinner or a large party. It is a universal favorite and is easily made for a crowd. Lasagna works well since it can be made ahead, baked right before dinner and pulled out of the oven hot and bubbling. The recipe we’ve included in the March/April issue is a great basic. It uses dried herbs that are in most pantries. It is wonderful “as is” but additions can also be made. Spinach, red peppers or Italian sausage could be used to tailor it to your family’s tastes.

Another advantage of a lasagna dinner is the ease of the side dishes that go along with it. A beautiful salad is made more special with homemade dressing and bread can be perked up with a cheese mixture. Poppy Seed Parmesan Salad Dressing
(serves 6 to 8)

½ cup sugar
¼ cup vinegar
1 cup mayonnaise
2/3 cup Italian salad dressing
¼ cup Parmesan cheese, shredded
1 tablespoon poppy seeds
¼ teaspoon each of salt and pepper

Combine sugar and vinegar, whisk in Italian salad dressing and mayonnaise. Stir in Parmesan cheese and poppy seeds. Stir in salt and pepper. Chill. Shake or whisk just before pouring over salad greens of your choice.
